Almond Meal Pizza
Ingredients:
2 cups Almond meal
2 tbsp Mixed Italian herbs
2 Eggs
Organic tomato paste
Prosciutto
Rocket
Your preferred cheese (goat’s cheese or DF cheese if desired)
Method:
To make the dough, mix almond meal and Italian herbs. Add eggs and mix until it becomes a dough consistency, if dry add a bit of water.
Roll into a ball and place between two sheets of baking paper. Roll flat with a rolling pin (or a wine bottle will do the trick). Trim edges if desired and place on a lined baking tray.
Bake at 180c for 15 to 20 minutes or until the edges have started to crisp and the crust begins to brown all over.
Remove from oven and apply a thick layer of tomato paste then layer with prosciutto, rocket and sprinkle with your preferred cheese.
Pop back in the oven for a further 10 minutes and bake until cheese has melted and the edges are golden brown.
Slice and serve!
