Zesty Lemon Caramel Balls
Ingredients:
2 1/2 cups cashews
1/2 cup macadamia butter (don’t sub this out for anything else, its the secret)
4 pitted medjool dates (and 4 only)
Zest of 1 lemon + a squeeze of juice
2 tbsp pana cashew caramel (optional)
2 tbsp shredded coconut (optional)
Method:
Blend all ingredients together in a mixer and roll into small balls.
Drizzle plant based pana caramel dressing and shredded coconut on top.
Place in freezer until ready to eat.
Will keep well in freezer for up to 2 months, defrost for 5 mins when ready to eat.
